Pumpkin Maple Cream Whoopie Pie’s

Dry Ingredients:
3 cups all-purpose flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp ginger
1 tsp nutmeg
1 tsp ground cloves
Wet ingredients:
3/4 cup vegetable oil
4 tablespoons butter (melted)
2 cups maple sugar
3 tablespoons granulated sugar
2 eggs
2 and 3/4 fresh pumpkin purée
2 tsp vanilla extract
How to make Fresh Pumpkin Purée:
Cut pumpkin in 4ths and take out seeds
Bake at 400° for 40-60 minutes
(You want the pumpkin to shed off and be soft)
Once it is peeling off place it in a blender until it’s a purée
Maple Butter Frosting:
1 stick butter
8 oz cream cheese
4 cups powdered sugar
1/4 tsp cinnamon
1 cup Dark Robust Maple Syrup
Mix the wet ingredients together
Mix the dry ingredients in a separate bowl
Fold the dry ingredients into the wet mixture until it is thick
Use 2 tablespoons of batter and place on baking sheet
Bake at 350° for 12-15 minutes or until golden brown.
Let the cakes cool and then add the frosting mixture and close.
Drizzle Whoopie Pie with some maple frosting and maple cream and enjoy.
