Maple Lemonade Popsicle’s
Makes 8 Popsicles
- ¾ cup lemon juice from fresh squeezed lemons
- 1 ¼ cup water
- ¼ cup pure maple syrup
- 1 ½ teaspoons of finely chopped mint leaves
Combine all ingredients in a bowl. You can adjust amounts of lemon and maple to personal preference of tart/sweet ratio. Pour into popsicle molds leaving 1/4 – 1/2 inch space on top to allow for expansion in freezing process. Freeze for 6-8 hours or overnight.
