A temporary grade kit is a tool used to determine A temporary grade kit is a tool used to determine the color grade of syrup by judging a sample against standard. These standards are the lowest allowable color grade for Golden, Amber & Dark. Over the weekend we were making a nice Golden Delicate. The colder temperatures allow us to make light syrup, and as the temperatures rise the grade will darken and the flavor will get stronger!

We are looking forward to light freezes at night a We are looking forward to light freezes at night and 40 degree days! 
Why you ask?
If it is very cold at night than it takes longer for us to thaw sap during the day. But if it is consecutively to warm during the day the trees might bud! 
It's all a balance and what makes it truly fun is that we have no control what mother nature will throw at us! 🍁🌞❄️
